The 3711 took off like crazy on the plate, I slanted it last night, so its available as soon as its grows there.
Yeah I had the oxygenator thingie available, but the yeast I had looked so good and active that I decided not to. The krausen could not even fall before it fully attenuated by Wednesday. I'm considering racking it right out from under the foam and chilling. I better taste it first..

I didn't sanitize your bottle before filling it because I thought it would disappear within the hour..

Thanks Rob for offering samples of these. And thanks Josh Boutwell for providing another couple strains. Lots of new additions lately! I'm currently in the process of getting these new yeasts stored, as well as re-culturing these original yeasts from 3-4 months ago. Everything has stored just fine in both water and the slants. Just about to surpass 20 total strains in the bank! woo!

I've been considering doing some "breeding" soon... which would involve raising separate cultures of a single strain, putting it through some batches, side-by-side comparisons, and then ultimately banking a "super" version of a strain which will be uniquely suited to my own techniques and beers. Fun stuff!

Keep those strains coming! Also from now on plan on 4-5 days to culture a strain to pitching count. 3 days is pushing it, and was giving a couple of you some longer than necessary lag times. If its more than 12 hours lag or so its too much. We need Pig Bitches! err big pitches that is..

I updated the original post with all the new strains coming in, and labeled each strain in the bank with the supposed brewery of origin. Also will soon have available our first strain of Brettanomyces.

Edit 7/16/10:
I am completely perplexed by the activity of several plates I've tried to take of brett lambicus. So consider that one for now unavailable. I know, collective moan of disappointment. I'll figure these buggers out eventually.
